"Hard to find" Information

I emailed Calphalon for this after I couldn't find it anywhere including their own website. Great brand, well made, sturdy, and easy to use

I've had this convection oven for a while now and used it for many types of things. I wanted something that, because I cook for just myself quite a bit, I could use for baking, broiling, etc, without cranking up the big oven. The microwave is great, but it's not the best choice for many things. Anyway, this convection oven is fitting the bill very well.The unit is attractive and I find the size to be perfect. Not only does it go well on one of my kitchen counters, but the inside is a great size too. As they say, it will easily fit a 13x9" baking pan. It comes with a lightweight, nonstick pan that is about 9x10" that is very handy. Do know, however, that it IS a lightweight pan and will warp up on diagonally opposite sides during baking. It does go back flat afterward, but it is noteworthy. Since this pan is, by far, not that integral part of the unit I didn't find this to be a deal breaker. I have plenty of other pans to use. I have used the included pan many times and, aside from the temporary warping, it works just fine.The outside of the unit will get kind of hot...hot enough that you don't want to put your hand on it, but not hot enough to cause damage or even heat up the area more than several inches from it. The most heat generated from using it at 425F for an hour or more is that the outside bottom of the cabinet above will get warm. I was initially concerned, as I had chosen a spot for this unit that had cabinets above. I'd read about some lesser convection ovens/toaster ovens that had problems with creating a LOT of heat. I was happy to realize that this one is made well enough that it is perfectly comfortable and safe with cabinets above it. (I will post a picture)You can program from a number of choices of types of cooking (bake, broil, toast, bagels, pizza, etc) and choose any number of minutes you need. The controls are well explained in the manual and very easy to use.I am very pleased having chosen this particular (my first) convection oven.

Calphalon XL Digital Convection Oven

After my 8-year old Oster XL Digital Convection Oven died, I went on a search for a new replacement. Having had a convection oven, I already knew the advantages of its better all-around cooking performance with counter-top ovens. Also, once you use digital function controls, going back to analog feels obsolete.My wife is a serious cupcake baker, so finding the widest oven available for her cupcake pans was a top priority. Also, a must feature was a non-stick coated interior for easy cleaning. That feature was missing on the Oster and its interior oven looked nasty over the years. Other important features for us were a front pullout crumb tray, quiet convection fan and good toasting capability.Armed with a 20% off coupon, I went to Bed Bath & Beyond. They had the Breville BOV800XL, Cuisinart TOB-195 and Calphalon XL ovens. The Cuisinart was eliminated very quickly for its smallish interior oven, rear pull-out crumb tray and an underwhelming styling IMO.At first glance, it appeared to me that the Breville was the larger oven compared to Calphalon; also, it was $50 higher in price. But the display model was missing its oven rack. So I took out Calphalon's rack and shoved it into the 800XL only to discover that it was too big to fit. Yea, the Calphalon has an interior oven wider than Breville's 800XL by about ¼-inch. It may not seem important, but the extra real estate allowed a 13 ¾" wide cupcake pan to slide into the oven without touching side walls. The deal was sealed with a 20% off coupon and much lower price than BOV800XL.The Calphalon XL Convection Oven is smartly styled with a brushed stainless steel finish. A well designed oven door handle effectively keeps your hand away from the hot exterior when baking. Easy to use function controls with one knob for time set and second one for oven temperature. Each knob has a rubberized grip for solid finger contact.The high contrast digital display is very easy to read from across the kitchen room. You can set the oven shut-off timer up to two hours. Six presets are available and the Calphalon will remember your last setting.Once you select a cooking mode, a yellow "Start" button will flash until you press it; then, a steady glow remains while the oven is operating. The digital display will show the oven temperature while it's in preheating mode. It beeps when set temperature is reached and the time remaining begins to count down. A very simple but effective design.During operation, a whisper quiet convection fan and conventional heat rods worked perfectly for accurate oven temperature. Roasting and baking final results were as good as a full size oven. Toasting sliced bread produced crisp exterior with a moist interior. The Bagel Mode was superb for a crunchy upper and slightly crisp lower bagel. We especially love this setting for English muffins.The weakest cooking results came from broiling meats. If one wanted a seared finish, pan frying the last few minutes would be required. If you use non-stick pans, it's a small nuisance.A couple of things annoyed me with the Calphalon XL Convection Oven. NASA can send a robot to Mars and explore its turf, but Calphalon's engineers can't figure how to design a light inside their oven. I'm baffled.The second issue, Calphalon is a world class cookware company, and yet, they throw in a 9 x 10 cheap oven tray that warped every time I used it. If this company was managed by Apple executives, the smallest detail would not have been an afterthought. I threw the tray away and bought a 9-inch round, non-stick bake pan from Wilton's high end line. It includes a 12-inch wing span handles and is superb for personal dishes or baking homemade pizza in the convection oven.Despite a couple of issues, the Calphalon XL Digital Convection Oven delivers high performance and reasonable value for its price. It's smartly styled and should be very useful in anyone's kitchen.
